Pesto sausage tray bake

This veggie packed tray bake is great for families with kids or, if you're trying to cut back on your meat consumption, these Meatless Farm sausages are a great substitute

Veggie sausage bake
  • Serves 3

  • 1 pack of Meatless Farm sausages
  • 1 Parsnip cut into chunks
  • 1 tin of chickpeas drained and rinsed
  • 100g Vine tomatoes
  • 3tbsp Pesto dairy free if required
  • 1 Red onion cut into chunks
  • 200g Butternut squash cut into chunks
  • Fresh basil leaves
  • Salt and pepper to taste


  • STEP 1

    Preheat oven to 180C/350F.

  • STEP 2

    Line or grease a baking tray/dish, and scatter with chickpeas and butternut squash cubes.

  • STEP 3

    Add the sausages, parsnips, red onion and tomatoes.

  • STEP 4

    Drizzle with olive oil, season with salt and pepper, and place in oven for 30 minutes.

  • STEP 5

    Dollop with pesto and garnish with basil leaves, before serving.
