Pesto sausage tray bake

This veggie packed tray bake is great for families with kids or, if you're trying to cut back on your meat consumption, these Meatless Farm sausages are a great substitute

Veggie sausage bake

  • Meatless Farm sausages 1 pack
  • Parsnip 1, cut into chunks
  • Chickpeas 1 tin, drained and rinsed
  • Vine tomatoes 100g
  • Pesto 3tbsp, dairy free if required
  • Red onion 1, cut into chunks
  • Butternut squash 200g, cut into chunks
  • Fresh basil leaves
  • Salt and pepper to taste


  • Step 1

    Preheat oven to 180C/350F.

  • Step 2

    Line or grease a baking tray/dish, and scatter with chickpeas and butternut squash cubes.

  • Step 3

    Add the sausages, parsnips, red onion and tomatoes.

  • Step 4

    Drizzle with olive oil, season with salt and pepper, and place in oven for 30 minutes.

  • Step 5

    Dollop with pesto and garnish with basil leaves, before serving.
