Irish rump steak with wild mushrooms and duck egg
This luxurious steak and duck egg is a classy spin on a rustic classic

Ingredients
- Irish rump steak 2 x 250g
- Mixed wild mushrooms 400g
- Duck eggs 2
- Butter 25g
- Shallots 50g, finely chopped
- Parsley a good pinch
- Garlic 1 clove, finely chopped
- Olive oil a splash
Method

Step 1
Season the steaks well with salt and pepper on both sides. Heat a splash of oil in a frying pan over a medium heat and fry the steaks for about 2 minutes on each side for medium. Remove steak from the pan and allow to rest for 5 minutes.

Step 2
In the same pan that you fried your steaks, heat a small amount of olive oil and start to fry the shallots, garlic and wild mushrooms over a medium heat for 3-4 minutes until cooked then add the nob of butter and chopped parsley.

In a clean pan with a splash of oil gently fry your duck egg to your liking.

Thinly slice your steak and neatly assemble on a plate with you mushrooms and duck egg.
