Grilled trout with toasted almond butter

Give this light summery trout dish a try!

Trout With Almond Butter

  • Trout fillets 4, defrosted if frozen
  • Chopped Sweet Almonds 20g
  • Butter 50g
  • Olive oil 2 tbsp
  • New potatoes 500g or half a bag, cooked, drained and crushed
  • Juice of half a lemon
  • Salt and pepper


  • Step 1

    Pre-heat the grill

  • Step 2

    Place the trout fillets onto a baking tray, skin side down, and drizzle with the olive oil. Season with salt and pepper to taste.

  • Step 3

    Place the tray under the grill and allow to cook for 4-5 mins.

  • Step 4

    Remove tray from under the grill, turn the fillets over and gently peel the skin back to remove.

  • Step 5

    Add the chopped almonds and butter to a non-stick pan over a moderate heat until the butter foams and the almonds brown. Finish with the lemon juice.

  • Step 6

    To serve, place the trout fillets onto the crushed new potatoes and spoon over the almond butter.
