This delicious granita can be made a couple of days in advance, so it's the perfect dessert for a summer party or dinner.

Tip the sugar into a small pan and add 100ml (31⁄2fl oz) cold water. Bring to the boil without stirring – the sugar should dissolve and the syrup will become clear as it warms up. Boil for 2 minutes, then take off the heat and set aside to cool.
Cut the watermelon into wedges, discard any large seeds and slice off the skin. Roughly chop and blitz in a food processor until smooth. Pour into a large freezer-proof tub and add the cold sugar syrup.
Squeeze in the lime juice and add the rum. Finely chop the mint leaves, add to the watermelon and mix. Freeze for 4-5 hours, then stir with a fork to break it up. Freeze for another 4-5 hours, then stir again. Do this 2-3 more times until the mixture is frozen but with a rough texture. Over 24 hours, you should stir the granita 4-5 times.
Serve in small, chilled glasses or bowls. To serve, pour over a little more rum, if liked, and garnish with a sprig of mint.
