Traditional braised red cabbage

Ingredients

  • 2 tbsp Vegan butter (plus extra to serve)
  • 1 Red onion (finely sliced)
  • 1 Cinnamon stick
  • ¼ tsp Ground cloves
  • ¼ tsp Ground nutmeg
  • 1 Red cabbage (cored and finely shredded)
  • 1 Apple (peeled, cored and finely chopped)
  • 3 tbsp Light muscovado sugar (or any soft brown sugar)
  • 150ml Balsamic vinegar
  • 2 tbsp Cranberry sauce
  • 1 tsp Salt
  • ¼ tsp Black pepper

Method

  • Step 1

    Melt the butter in a large pan on a medium heat and add the onion. Fry for 5 minutes before adding the cinnamon, cloves and nutmeg. Heat for a further 2 minutes.

  • Step 2

    Stir through the cabbage, making sure it’s well coated in the butter and spices.

  • Step 3

    Add the apple, sugar and vinegar, reduce the heat to low, stir well. Cover and cook for 45 minutes, stirring occasionally.

  • Step 4

    Stir through the cranberry sauce, salt and pepper and cook for another 25 minutes. Stir through 1 tbsp butter before serving.
