Apple and pork Thai-style smash burgers

The addition of a grated Jazz apple will give your pork smash burgers an extra sweetness in combination with classic Thai flavours of coriander and chilli.

Ingredients

  • 1 Jazz apple, grated
  • 500g (1lb) minced pork
  • 30g (1oz) fresh coriander, finely chopped (leaves and stalks)
  • 1 red chilli, finely sliced
  • 1 egg, beaten
  • sea salt
  • 6 burger buns
  • 6 lettuce leaves
  • 1 large tomato, sliced
  • sriracha mayonnaise, to taste
  • neutral oil, for frying

Method

  • Step 1

    Add the grated Jazz apple to a large bowl, alongside the pork, coriander, chilli and beaten
    egg. Season with salt and mix well to combine.

  • Step 2

    Divide the mixture evenly into 6 and roll into large meatballs.

  • Step 3

    Add a splash of oil to a large pan and heat until shimmering. Add one meatball at a time and smash down to form a thin burger patty. Do this in batches to avoid overcrowding the pan.

  • Step 4

    Cook over a medium heat for two minutes, then gently flip. Continue to cook for another two minutes, or until the burgers are cooked through.

  • Step 5

    Serve either a single patty or two on burger buns with sliced tomato, lettuce and a drizzle of sriracha mayonnaise.
