Sweet potato and spinach gratin

Ingredients
- 2 red onions
- 2 garlic cloves
- 30ml rapeseed oil
- 1 x 250g pouch Aldi Good Grains Delicious Lentils
- 4 large vine tomatoes
- 700g sweet potatoes
- 120g spinach
- 200g coconut milk
- 1 heaped tsp paprika
- sea salt and black pepper
Method
Step 1
Preheat the oven to 200°C/180°C fan/gas mark 6. Peel the red onions, cut in half and slice thinly. Peel and mince the garlic.
Step 2
Sauté the onion slices and the garlic in the oil in a frying pan for 5 mins on a low heat. Put the lentils in a bowl and add the sautéed onion and garlic. Chop the tomatoes and add to the mix – stir well. Peel the sweet potatoes and slice thinly.
Step 3
Put half the lentil mix in the bottom of a roasting dish, then layer half of the spinach leaves on top. Top them with half the sweet potato slices. Repeat this step.
Step 4
Mix the coconut milk with the paprika, and season with some salt and black pepper. Drizzle over the top layer of sweet potatoes. Bake for 1 hour.
