Strawberry mille-feuille
Whip up this classic French pastry filled with juicy strawberries and fresh cream. It's the perfect summer dessert and will wow your friends and family.

Ingredients
- 1 pack Ready rolled puff pastry
- 2 tbsp Icing sugar (plus extra to sprinkle)
- Handful of strawberries
- 300ml (10.2fl oz) double cream
Method
Step 1
Cut the puff pastry into 8 rectangles about 10x5cm (4x2in).
Step 2
Dust with 1 tbsp icing sugar and place on a baking tray lined with baking paper. Place another sheet of baking paper on top and another baking tray to keep it gently squashed down while it cooks.
Step 3
Bake for 15 minutes at 180°C/160°C fan/350°F/gas mark 4 then allow to cool.
Step 4
Meanwhile, whisk the cream by hand in a bowl for about 10 minutes to create a whipped cream with stiff peaks. Add 1 tbsp of icing sugar and whisk for another 30 seconds.
Step 5
To assemble each mille-feuille, place one puff pastry rectangle on a plate, add a layer of cream, then sliced strawberries, top with a puff pastry rectangle and a sprinkle of icing sugar.
