These tempting strawberry ice-cream sandwiches would make the perfect end to al fresco meals and summer barbecues.

You can easily scale this recipe up or down. If you’re feeding a crowd, pre-scoop the balls of ice cream onto a tray and leave in the freezer until ready to serve

Ingredients

  • 200g (7oz) strawberries (sliced)
  • 1 tbsp balsamic vinegar
  • 2 tsp caster or light brown soft sugar (or maple syrup)
  • 4 brioche buns (toasted, if liked)
  • 8 scoops Carte D’Or Madagascan vanilla ice cream

Method

  • Step 1

    Put the sliced strawberries in a bowl with the vinegar, sugar and a small pinch of salt. Toss together and leave to macerate for 30 minutes, stirring halfway.

  • Step 2

    Split open the brioche buns and divide the strawberries between the bases. Top each with 2 scoops of vanilla ice cream, then drizzle over the strawberry macerating juices and top with the bun lids. Serve immediately.
