Toasted sourdough with avocado and watercress

These scrummy sourdough bites are a delicious taste of Italy and a perfect light dish to kickstart your dinner

Avocado on sourdough toast

  • 1 ripe avocado
  • Lemon 1, juiced
  • Extra virgin olive oil 2 tbsp
  • Salt and pepper
  • Sourdough bread slices 5, thin, medium sized
  • Olive oil 2 tsp
  • Mixed radishes 50g, thinly sliced
  • Red onion ½, thinly sliced
  • Watercress 1 bunch, picked


  • Step 1

    Preheat the oven to 180ºC/350ºF/Gas Mark 4.

  • Step 2

    While you are waiting for the oven to warm up, cut the avocado in half, remove the stone, scoop out the flesh and place in a small bowl. Lightly mash with a fork, then add the lemon juice and extra virgin olive oil, season with salt and pepper then set aside.

  • Step 3

    Place the sourdough slices on a large baking tray, drizzle over the olive oil and put in the oven for 8 to 10 minutes, or until crispy and toasted. Remove from the oven and leave to cool for 5 minutes.

  • Step 4

    Once cooled break each piece of toast into 4 pieces, then spread with the avocado and top with radish, red onion and watercress. Serve immediately.
