Potato, cauliflower and cumin soup

This healthy soup is a warming addition to any winter meal, and a great way to sneak some veggies into your kids' dinner!

Cauliflower and cumin soup


  • Step 1

    Heat the butter in a pan then add the onion, leek and cauliflower.

  • Step 2

    Sprinkle lightly with cumin, cover with a lid and cook gently for 10 minutes before adding the potatoes. Cook for a further five minutes.

  • Step 3

    Add the milk and the stock. Bring to the boil and simmer gently until potatoes are tender.

  • Step 4

    Blitz the soup in a blender until smooth, re-heat gently and season to taste before serving.
