  • Step 1

    To make the pickled cucumber – put the white wine, vinegar, water and sugar in a pan and bring to a simmer over a medium heat whilst stirring. Simmer for 1 minute and pour over the cucumbers. Season and leave.

  • Step 2

    To make the mayonnaise – put the egg yolks, mustard and white wine vinegar into a bowl and whisk together for 1 minute. Slowly add the oil drop by drop, then in a steady stream, whisking constantly until the mixture is emulsified and thick. Season to taste.

  • Step 3

    To make the Marie Rose Sauce – mix all the ingredients together.

  • Step 4

    To construct the Prawn Cocktails – layer the lettuce, sauce, pickled cucumbers and prawns in serving dishes. Top with the chopped toasted soy beans and serve with slices of toasted baguette.
