Spinach, watermelon and grain salad

This spinach, watermelon and grain salad is the perfect light lunch, refreshing dinner or tasty side dish.

This delicious salad recipe is ready in under 15 minutes – the ideal lazy dinner for two!

Top tip: To have a very runny yolk, poach your egg for 3 minutes. For a jammy egg: 4 minutes. For a fully cooked yolk: 5 minutes

Ingredients

  • 250g/9 oz Pouch of mixed grains
  • 250g/9 oz Spinach
  • a quarter Small watermelon diced
  • half Lemon juiced
  • 1 tbsp Extra virgin olive oil
  • Salt and pepper to taste
  • 2 Medium eggs
  • 2 tbsp Fresh parsley roughly chopped

Method

  • Step 1

    Heat the grains according to the packet instructions. 

  • Step 2

    Place the spinach in a large bowl, cover with cling film and microwave for 2 minutes or until just wilted, stir into the grains and add the watermelon. 

  • Step 3

    Whisk together the lemon juice and oil, season and toss into the salad. 

  • Step 4

    Meanwhile, poach the eggs according to your preference and place on top of the salad. Sprinkle with parsley and serve.
