Sirloin steak with clotted cream peppercorn sauce

Ingredients

  • 50g/1¾oz Trewithen Dairy salted butter
  • 1 small shallot (finely diced)
  • 1 tbsp black and green peppercorns (lightly crushed)
  • 75ml/2.5 fl oz whisky or apple brandy
  • 150g/5.2oz Trewithen Dairy Cornish clotted cream
  • salt and pepper
  • 2 sirloin steaks
  • 1 tbsp cold-pressed rapeseed oil
  • sea salt (to season)
  • purple sprouting broccoli and kale (to serve)

Method

  • Step 1

    Melt the butter in a frying pan and sauté the shallot with the peppercorns for 4-5 minutes, until soft.

    Add the whisky and cook on a high heat to burn off the alcohol. Add in the clotted cream and heat through.

    Season with a pinch of salt and keep warm until ready to use.

  • Step 2

    Drizzle the steaks with a little oil and season generously. Grill or griddle for 2-4 minutes per side, depending on your liking.

  • Step 3

    Slice the steaks into strips and divide between the plates. Serve with chargrilled sprouting broccoli and wilted kale, if liked, along with the peppercorn sauce.
