Seville orange and poppy seed cake

Ingredients
- 250g unsalted butter, plus extra for greasing
- 300g caster sugar
- 3 eggs
- 250g plain flour
- 1½ tsp baking powder
- 7 Seville oranges, 4 zested and juiced, 3 peeled and sliced
- 50g poppy seeds
- 150ml water
- 2 cardamom pods
- ½ vanilla pod
Method
Step 1
Preheat the oven to 190°C/170°C fan/gas mark 5. Line the base of a 20cm springform cake tin with non-stick baking paper, lightly grease the sides with butter. Beat the butter and 200g of caster sugar in a bowl for 2 minutes until light and fluffy.
Step 2
Add the eggs, one at a time, beating after each addition. Add the flour and baking powder and beat until combined. Add the zest and juice of four oranges and poppy seeds then mix. Pour into the tin and bake for 50 minutes. Remove from the oven but leave in the tin.
Step 3
For the syrupy oranges, bring the water, remaining sugar, cardamom pods and vanilla to a boil in a small saucepan, then simmer for 7-10 minutes, until syrupy. Remove from the heat.
Step 4
Add the orange slices into the syrup. Remove the cake from the tin. Spoon over the syrupy oranges.
