Roasted tomatoes with whipped feta & kefir

Roasted cherry tomatoes in a creamy feta and kefir yoghurt dip makes for a refreshing summer starter... or even just a midday snack.

Ingredients

  • 200g Feta cheese
  • 100g Biotiful kefir yoghurt
  • Zest of 1 lemon, finely grated
  • 200g Cherry tomatoes, halved
  • 1 garlic clove, sliced
  • 1 tbsp Extra virgin olive oil
  • 1 tbsp Balsamic vinegar
  • A handful of basil, roughly torn
  • Pita bread (to serve)

Method

  • Step 1

    In a blender or food processor, whizz the feta with the yoghurt and lemon zest until smooth.

  • Step 2

    Heat the oven to 180℃/gas mark 4/355℉ fan. Add the tomatoes, basil, garlic and olive oil to a small roasting tray. Roast for 10-15 minutes, until softened and slightly caramelised. Add the basil.

  • Step 3

    Meanwhile, toast the pita and slice it into bite-sized pieces.

  • Step 4

    Spread the whipped feta on a serving plate, top with the tomatoes and serve with the toasted pita.
