Passionfruit and mango martini ice lollies

Looking for a way to cool down and enjoy your favourite beverage? We have just the recipe! Enjoy our non-alcoholic, vegan ice lollies on hot days. Ideal for BBQs, picnics and summery evenings in the garden.

Ingredients

  • 40g/1.4oz pulp of fresh passion fruits (roughly 3-4 passionfruits)
  • 410g (14.4oz) fresh mango chunks
  • 2 tbsp maple syrup (optional)
  • 50ml (1.7oz) Belvoir Farm Non-Alcoholic Passionfruit Martini
  • 1 tsp vanilla paste
  • 5 tbsp maple syrup
  • 200g (7oz) coconut yoghurt
  • 200g (7oz) coconut cream

Method

  • Step 1

    Scoop the flesh out of the passion fruits and pass through a sieve to separate the seeds. Use a spoon to press and squeeze out all of the pulp. Reserve the seeds.

  • Step 2

    Add the passion fruit pulp, Passionfruit Martini, mango chunks and maple syrup, if using, to your blender and blend until smooth.

    Stir the passionfruit seeds back into the mixture.

  • Step 3

    Half-fill 10 silicone ice lolly moulds with the mix and place in the freezer for an hour.

  • Step 4

    For the coconut layer, add all vanilla paste, maple syrup (5 tbsp), coconut yoghurt and coconut cream to your blender and blend until combined – do not over-mix.

    Pour the coconut mix into the lolly moulds on top of the fruit layer and insert a wooden lolly stick into each one.

    Freeze for at least 5 hours or until completely set.

  • Step 5

    To remove from the moulds, run the lollies under some warm water for a couple of seconds to release them. Store in an airtight container in your freezer for up to a month.
