Orecchiette with sausage and purple sprouting broccoli

Ingredients
- 400g Cumberland sausages
- olive oil
- 1 red onion, diced
- 1 garlic clove, crushed
- salt and pepper
- 1 lemon, zested
- 500g orecchiette pasta
- 300g purple sprouting broccoli, trimmed and cut into bite-sized pieces
- 50g Parmesan cheese, grated
Method
Step 1
Slice down the middle of the sausages to open them out, then peel off the skin.
Step 2
Heat 1 tbsp olive oil in a frying pan over a medium heat. Add the onion and gently fry for 5-6 minutes. Add the garlic and fry for another 2 minutes.
Step 3
Add the sausage meat and use the back of a wooden spoon to break it up. Season. Turn the heat up and fry for 10-15 minutes until the sausage is golden and crispy. Add lemon zest.
Step 4
Meanwhile, cook the pasta in a pan of boiling water for 6 minutes, then add the broccoli and cook for a further 4 minutes. Drain the pasta and broccoli, reserving a cup of water.
Step 5
Add the reserved pasta water into the pan with the sausage and stir to make a sauce, then tip over the pasta. Add 1 tbsp olive oil, a squeeze of lemon juice and Parmesan, to serve.
