No-cook tacos with sweet pepper relish

No time to cook? No problem – whip up these no-cook tacos with sweet pepper relish in just a matter of minutes.

Choose any protein filling you like for these tacos – you could try spicy minced beef, sticky prawns, or black beans and sweetcorn.

Ingredients

  • 1 Avocado
  • Lime juice
  • Leftover or ready-cooked chicken, shredded
  • Sour cream
  • Tracklements Sweet Pepper Relish
  • 6 Soft taco shells
  • 1 Small red onion (for the pico de gallo)
  • Handful of tomatoes (for the pico de gallo)
  • Coriander (for the pico de gallo)
  • Lime juice (for the pico de gallo)
  • Salt (for the pico de gallo)

Method

  • Step 1

    Lightly mash the avocado and add a small squeeze of lime juice to stop it from browning.

  • Step 2

    For the pico de gallo, finely chop the red onion, tomatoes and coriander and mix together in a bowl with a squeeze of lime and a pinch of salt.

  • Step 3

    Add some shredded chicken, a spoonful of sour cream, mashed avocado, relish and the pico de gallo to each taco shell, to serve.
