Marmalade-glazed sausage rolls

Ingredients
- 1 small red onion, chopped
- 1 garlic clove, minced
- 1 tsp smoked paprika
- ½ tsp ground cumin or allspice (optional)
- 8 sausages, skins removed
- 1½ tbsp La Vieja Fábrica No Peel marmalade, plus extra to brush
- 1 tbsp fresh parsley or sage, chopped
- salt and pepper, to taste
- 1 sheet ready-rolled puff pastry
- milk, for brushing
- sesame seeds or nigella seeds, to top (optional
Method
Step 1
Preheat the oven to 200°C/180°C fan/gas mark 6. Line a tray with baking paper.
Step 2
In a small pan, sauté the red onion and garlic until softened – about 5 minutes. Add the paprika and cumin or allspice, if using. Stir for another minute, then remove from the heat.
Step 3
In a bowl, mash the sausages. Add the onion mix, marmalade, herbs, salt and pepper. Mix well.
Step 4
Unroll the puff pastry and cut into 2-3 long strips, brushing lightly with marmalade. Spoon the filling in a log shape down the centre of each strip. Fold over and seal the edge with a fork. Slice into rolls.
Step 5
Brush with milk and sprinkle with seeds, if using. Bake for 20-25 minutes, until golden.
