Five spice pork with noodles
This traditional pork dish is perfect to mix up your midweek meals

Method

Step 1
Place the pork on a chopping board between two large pieces of cling film. Using the base of small saucepan or rolling pin bash them all over until 1cm thin.

In a large bowl mix the marinade ingredients together. Add the pork, coat on both sides, cover and set aside. Preheat the oven to Gas mark 4, 180°C.

Heat the oil in a large non-stick pan. Remove the pork from the marinade (reserve the marinade) and cook for 3 minutes on one side. Add the marinade. Bring to the boil and reduce the heat. Turn the pork over, place the pan in the oven and cook for a further 6-8 minutes or until the juices run clear. Thinly slice the pork and return to pan with sauce.

Meanwhile, prepare the noodles. Cook the noodles according to the packet instructions, drain and divide between 4 bowls. Top with the beansprouts, cucumber, chillies, (if used) spring onions, herbs and peanuts.Arrange the pork over the vegetables, spoon over the sauce and serve immediately.
