Lime and ginger ice cream with chocolate sauce

Make your homemade ice cream a bit more adult by adding zingy citrus and warming ginger flavours.

Ingredients

  • 300 ml (10 fl oz) Double Cream
  • 1 x 397g tin condensed milk
  • 3 unwaxed limes, finely zested and juiced
  • 6 balls stem ginger (1 finely chopped, 5 roughly chopped)
  • Pinch of salt
  • 5 tbsp stem ginger syrup (from the jar)
  • 5-6 tbsp Milk
  • 100g dark chocolate, broken into chunks

Method

  • Step 1

    Put the double cream, 175g of the condensed milk, zest and juice from 2 limes and roughly chopped ginger into a food processor with a pinch of salt. Whizz until the mixture thickens, then pour into a 1 litre plastic container and freeze for at least 6 hours or overnight.

  • Step 2

    To make the sauce, warm the remaining condensed milk, finely chopped ginger, ginger syrup and milk in a pan. Add the chocolate chunks, stirring until they melt. Stir in the remaining lime zest and juice and beat until combined.

  • Step 3

    To serve, place two scoops of ice cream in each bowl and spoon over hot chocolate sauce. It will set on the ice cream.
