Gut-friendly lemon, turmeric and ginger switchel

Makes 1 pint

Ingredients
- 400ml filtered water
- 2 tbsp apple cider vinegar ‘with mother’ (raw and unfiltered)
- juice of 2 large lemons
- 4-5cm piece of fresh ginger, peeled and grated
- 2-3 pieces of turmeric root, peeled and grated
- 1-2 tbsp honey, or to taste
- a pinch of sea salt
Method
Step 1
Place all the ingredients in a jug or jar and stir well to combine.
Step 2
Cover and leave to sit at room temperature for 12-24 hours, to allow the flavours to infuse and prebiotic fermentation to begin.
Step 3
Strain if desired and store in the fridge. Serve chilled as a shot, or diluted with filtered or sparkling water over ice.
