Jazz apple and red onion chutney

Ingredients

  • 3 Large red onions (peeled and finely sliced)
  • 1½ Jazz apples (finely chopped)
  • 240g Brown sugar
  • 285ml Apple cider vinegar
  • 1 tsp Salt
  • 1 tsp Pepper
  • 1 Bay leaf

Method

  • Step 1

    Add the sliced onion to a large pot with a dash of oil. Cook on a medium-low heat until soft.

  • Step 2

    Add all the other ingredients. Bring the mixture to the boil and then reduce to a simmer. Cover with a lid and cook until all the liquid has evaporated, approx. 2 hours.

  • Step 3

    Pour into a sterilised jar and store in the fridge for up to 2 weeks.
