Italian picnic sandwich

This easy Italian sandwich recipe is perfect for a summer picnic or bbq

Why not give summer a warm welcome by heading down to the park to enjoy a shareable spread? This Italian sandwich is the perfect picnic food.



  • Oval-shaped sourdough bread 1 loaf
  • Jar roasted peppers 290g, drained
  • Medium red onion 1, thinly sliced
  • Mozzarella balls 2, drained and sliced
  • Spicy Italian salami 90g pack
  • Pepperoni slices 90g pack
  • Wild rocket 100g

For the relish

  • Celery stalks 2, finely diced
  • Small capers 1 tbsp
  • Peperoncini or Peppadew peppers 4, thinly sliced
  • Red wine vinegar 1 tbsp
  • Extra virgin olive oil 2 tbsp
  • Oregano 2 tsp
  • Salt and pepper


  • Step 1

    In a small bowl, mix together the relish ingredients and season with salt and pepper. 

  • Step 2

    Slice the top 4cm off the loaf. Scoop out most of the inside, leaving 4cm at the bottom. Layer the ingredients inside the loaf, starting with the roasted peppers, then ½ the relish, the red onion, remaining relish, mozzarella, salami, pepperoni and rocket. Put the top of the loaf back on and wrap very tightly in plastic wrap. 

  • Step 3

    Put the loaf on a tray and top it with another tray. Weigh it down with something heavy, such as a cast-iron frying pan. 

  • Step 4

    To serve, unwrap and cut into thick slices.
