Halloumi and asparagus kebabs

Halloumi and asparagus kebabs

Ingredients

  • 2 x packs halloumi
  • 1 x pack asparagus tips
  • 1 lime
  • 3 tbsp olive oil
  • ½ red chilli
  • salt and pepper

Method

  • Step 1

    Drain the packs of halloumi, then slice into finger-sized pieces.

  • Step 2

    Cut the asparagus tips in half. Carefully thread the halloumi and asparagus onto the skewers (soak wooden skewers in water for 30 minutes to prevent burning).

  • Step 3

    Whisk together 1 tbsp lime juice and the olive oil. Thinly slice the chilli and add to the oil. Season to taste.

  • Step 4

    Brush the oil mix over the kebabs and barbecue or grill, turning and basting occasionally, until golden brown.
