Ginger salmon

Forget the takeaway: this ginger salmon recipe is the perfect Friday night feast

Cooking tip: For a slightly caramelised finish, brush a little extra marinade on the salmon during the last 2 minutes of baking and switch to cooking it under the grill.

Ingredients

  • 2 salmon fillets
  • 1 1/2 cups white rice
  • spring onions to serve
  • avocado to serve
  • sriracha sauce to serve
  • 1 tbsp Honey Heaven ginger set honey
  • 1 tbsp olive oil
  • 1 tbsp soy sauce
  • ¼-½ tsp chilli chopped
  • ½ tsp rice vinegar

Method

  • Step 1

    Mix all the ingredients for the marinade, brush your salmon and let it marinate for 20-30 minutes. Save the rest of the marinade for the end. 

  • Step 2

    Cook the rice. Meanwhile, chop the spring onions and slice the avocado. 

  • Step 3

    Bake the salmon for 10-15 minutes at 180°C/160°C fan/gas mark 4. 

  • Step 4

    Serve the salmon over the rice and drizzle with the remaining marinade. Top with the avocado, spring onions and optional sriracha sauce.
