Ginger Halloween cookies

Ingredients
- 125g softened butter
- 175g Honey Heaven Ginger Honey
- 1 large egg
- 185g plain flour
- ½ tsp baking powder
- ½ tsp salt
- ½ tsp cinnamon
- 60g white chocolate, melted
- edible eyes
Method
Step 1
Preheat the oven to 190°C/170°C fan/370°F/gas mark 5. Line a baking sheet with parchment paper.
Step 2
In a bowl, beat together the butter and ginger honey until light and fluffy. Beat in the egg until well combined. In a separate bowl, whisk together the flour, baking powder, salt and cinnamon. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
Step 3
Drop rounded tablespoons of dough onto the prepared baking sheet. Bake for 10-12 minutes, or until the edges are golden brown.
Step 4
Leave to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely. To decorate, drizzle with melted white chocolate and add some edible eyes.
