Fruit puff-pastries

These beautiful puff pastries are made using just five ingredients and can be made in under half an hour. Not only are these fruit puffs quick and easy to make, but they're customisable too! Fill with your favourite fruits and make these tasty treats for dinner parties or for an evening pick-me-up.

Ingredients

  • 1 x 420g (14oz) tin Del Monte fruit (pears, pineapple, peaches, or apricots)
  • 1 ready-rolled sheet puff pastry
  • 1 egg beaten
  • 2 tbsp flaked almonds
  • icing sugar for dusting
  • vanilla ice cream to serve

Method

  • Step 1

    Drain the can of fruit. Preheat the oven to 180°C/160°C fan/350°F/gas mark 4. Place the puff pastry sheet on a baking tray lined with parchment paper.

  • Step 2

    Arrange the fruit slices or halves, rounded side down (if applicable) in a fan shape spaced out on the pastry. If using fruit halves (like pears, peaches, or apricots), do not fully separate the top part so the halves stay together.

    Cut the puff pastry about 1cm (½in) around the fruit to mimic its shape and fold over the edges slightly. Cut out leaf shapes from the leftover pastry and score with a knife to decorate.

  • Step 3

    Add the leaves to the fruit puffs and egg wash the pastry. Sprinkle flaked almonds around the edges of the pastry.

  • Step 4

    Bake for 20 minutes, until golden and crisp. Dust with icing sugar and serve warm with ice cream.
