Fajita fried rice with Cajun chicken ‘croutons’

Fajita fried rice with Cajun chicken ‘croutons’

Ingredients

  • 300g Asda long-grain white rice
  • 2 Asda breaded chicken steaks
  • 6 tsp Cook by Asda Cajun seasoning
  • 1 onion, sliced
  • 2 peppers – red, orange or a mix, sliced
  • 1 tbsp olive oil
  • 175g drained sweetcorn
  • 45g Leerdammer Original grated cheese
  • 2 spring onions, thinly sliced

Method

  • Step 1

    Preheat the oven to 200°C/180°C fan/gas mark 6, or use an air fryer. Cook the rice according to the pack instructions.

  • Step 2

    Cut the breaded chicken steaks into 2cm chunks and toss with 2 tsp Cajun seasoning to coat. Space on a baking tray or put in the air fryer basket. Bake in the oven for 20 minutes, or the air fryer for 15 minutes at 180°C, until golden.

  • Step 3

    Meanwhile, fry the onion and peppers in the oil in a non-stick frying pan for 10 minutes until soft and beginning to brown. Stir in the remaining 4 tsp spices for 1 minute, followed by the cooked rice and sweetcorn. Stir fry for 2-3 minutes until the rice is piping hot.

  • Step 4

    To serve, divide the rice between bowls or plates, top with the crispy chicken croutons and sprinkle over the cheese and spring onions.
