Easy festive vegan pâté

Ingredients
- 200g Smoked tofu, drained and patted dry
- 100g Cashew pieces, soaked for a minimum of an hour or boiled for 15 minutes, drained and rinsed
- 3 tbsp Rapeseed oil
- 1 tbsp Ground almonds
- 1 Lemon, juice
- ½ tsp Smoked paprika
- Few drops of Liquid Smoke (optional)
- 2 tsp Cognac or brandy
- ½ tsp Freshly ground black pepper
- ½ tsp Salt
- 1½ tbsp Vegan butter
- ½ tsp Turmeric
Method
Step 1
Blend everything except the butter and turmeric until smooth. Spoon into small pots and smooth the top down.
Step 2
Melt the butter in a small saucepan on a low heat, then stir in the turmeric until it has dissolved.
Step 3
Pour a little of the melted butter onto the top of the pâté in each pot then chill in the fridge for at least an hour before serving. Cook's tip: Serve with celery sticks, chutney, pickles, crackers or crusty warm baguette.
