Easy festive vegan pâté

Easy festive vegan pâté

Ingredients

  • 200g Smoked tofu, drained and patted dry
  • 100g Cashew pieces, soaked for a minimum of an hour or boiled for 15 minutes, drained and rinsed
  • 3 tbsp Rapeseed oil
  • 1 tbsp Ground almonds
  • 1 Lemon, juice
  • ½ tsp Smoked paprika
  • Few drops of Liquid Smoke (optional)
  • 2 tsp Cognac or brandy
  • ½ tsp Freshly ground black pepper
  • ½ tsp Salt
  • 1½ tbsp Vegan butter
  • ½ tsp Turmeric

Method

  • Step 1

    Blend everything except the butter and turmeric until smooth. Spoon into small pots and smooth the top down.

  • Step 2

    Melt the butter in a small saucepan on a low heat, then stir in the turmeric until it has dissolved.

  • Step 3

    Pour a little of the melted butter onto the top of the pâté in each pot then chill in the fridge for at least an hour before serving. Cook's tip: Serve with celery sticks, chutney, pickles, crackers or crusty warm baguette.
