Vegan chocolate mousse
Silken tofu means that you don't have to eat dairy to enjoy the silky, rich delights of chocolate mousse
Ingredients
- 400g Silken tofu
 - 200g Vegan chocolate at least 72% cocoa
 - Tonka bean grating
 - Pinch of salt
 - 1tbsp Icing sugar
 - Good quality white and dark vegan chocolate to garnish
 
Method
Step 1
Break up the chocolate and melt in a bain-marie or microwave. Set aside to cool slightly.
Step 2
Using a hand blender, mix together the silken tofu, salt, icing sugar and a light grating of tonka bean to create a smooth mixture.
Step 3
Slowly add the cooled chocolate then mix thoroughly. Fill 6 small bowls or ramekins with the chocolate mixture and put in the fridge to chill for 2-3 hours.
Step 4
To serve, garnish liberally with shavings of white and dark chocolate.
