Peanut butter, chickpea and chocolate vegan blondies
These gorgeous vegan blondies are just what you need to satisfy your cakey cookie cravings

Ingredients
- Almond Breeze Nutri+ Fibre 1 cup
- Chickpeas 1 cup, drained and rinsed
- Baking powder 1 tsp
- Peanut butter 1 cup, melted
- Vanilla extract 1 tsp
- Maple syrup ½ cup
- Ground almonds ½ cup
- Cranberries ½ cup
- Cacao nibs ½ cup, or chocolate chips
Method

Step 1
Pre heat the oven to gas mark 4 and line a small baking tray with parchment paper.

Add all the ingredients apart from the chocolate to a food processor and mix until smooth & creamy.

Transfer the batter to a large bowl and stir in the chocolate chunks. Then into the baking tray, smooth out so that it’s even and then sprinkle with a little coconut sugar.

Bake for 25 – 30 minutes.

Allow to cool completely before removing from the tray and slicing. Enjoy!
