Coconut and fig energy balls
- Makes 10-12 balls
These healthy energy balls are great for long runs and a brilliant alternative to the artificial sugar gels that a lot of athletes opt for!

Ingredients
- Pecan nuts 65g
- Oats 75g
- Shredded coconut 3 tbsp, plus more for coating
- Dried figs 6, (if possible try to buy the ones without any preservatives or sulphates)
- Jazz Apple ½, grated (skin included)
- Date syrup 1 tbsp, (optional)
- Cinnamon 1 tsp
Method

Step 1
Place the oats and the nuts into a food processor and blitz for until a flour starts to form.

Step 2
Add all the remaining ingredients and process for another minute or so until you have a sticky dough.

Remove the mixture from the food processor and roll them into balls of the size you prefer.

Coat them in the shredded coconut and place them in the fridge for half an hour to firm up.

You can store them in air tight container in the fridge for up to 2 weeks.
