Coconut and fig energy balls

These healthy energy balls are great for long runs and a brilliant alternative to the artificial sugar gels that a lot of athletes opt for!

Makes 10-12 balls


Ingredients

  • 65g Pecan nuts
  • 75g Oats
  • 3tbsp Shredded coconut plus more for coating
  • 6 Dried figs (if possible try to buy the ones without any preservatives or sulphates)
  • ½ Jazz Apple grated (skin included)
  • 1tbsp Date syrup (optional)
  • 1tsp Cinnamon

Method

  • Step 1

    Place the oats and the nuts into a food processor and blitz for until a flour starts to form.

  • Step 2

    Add all the remaining ingredients and process for another minute or so until you have a sticky dough.

  • Step 3

    Remove the mixture from the food processor and roll them into balls of the size you prefer.

  • Step 4

    Coat them in the shredded coconut and place them in the fridge for half an hour to firm up.

  • Step 5

    You can store them in air tight container in the fridge for up to 2 weeks.
