Coconut ice

Ingredients

  • 397g Tin condensed milk
  • 350g Icing sugar
  • 350g Desiccated coconut
  • Pink food colouring paste

Method

  • Step 1

    Lightly grease a 20cm (8in) square baking tin with a flavourless oil. Put the condensed milk and sugar in a bowl and mix with a wooden spoon until smooth. Add the desiccated coconut and keep mixing until combined – it will get quite stiff.

  • Step 2

    Scoop out half the mixture and place in another bowl. Add a tiny amount of pink food colouring and mix.

  • Step 3

    Spread the pink mixture into the prepared tin and make sure it is flat. Spread the white mixture on top. Cover with cling film and leave to dry out overnight. Cut into squares and arrange in a pretty box.
