Ingredients

  • 100ml (3½fl oz) double cream
  • 1-2 shots (30-60ml/1-2fl oz) freshly brewed espresso coffee
  • 300ml (10½fl oz) Milk of your choice
  • ground sweet cinnamon, to dust
  • 1 tbsp dark soft brown sugar
  • ½ tsp ground sweet cinnamon
  • 2 tsp butter

Method

  • Step 1

    Make the cinnamon bun syrup first, as it needs to cool before use. Heat the brown sugar, cinnamon and butter with 1 tbsp water in a saucepan over a gentle heat until you have a smooth thin syrup and the sugar has dissolved. Set aside to cool.

  • Step 2

    When you are ready to serve, whip the cream with a third of the syrup until it forms soft peaks. Pour another third of the syrup into a cup or heatproof glass and pour over the hot coffee. Stir.

  • Step 3

    Steam or froth the milk until hot and foamy and pour over the coffee. Top with the whipped cinnamon bun cream, dust with a little cinnamon, drizzle over the remaining third of the syrup and serve immediately.
