Chocolate orange trifle

Ingredients
- 500g Asda fresh custard
- 170g Asda Extra Special Peruvian dark chocolate, chopped
- 250ml Fresh whipping cream
- 2 Asda chocolate yule logs, cut into 2.5cm-thick slices
- 50ml Cointreau
- 4 Asda sweetclems
- 200ml Double cream mixed
- 1 tsp Vanilla bean paste
- 50g Chocolate orange almonds, roughly chopped
Method
Step 1
Add the custard and 150g chocolate to a saucepan, place over a low-medium heat and stir constantly until the chocolate has fully melted. Scrape into a bowl, cover with cling film and cool. Chill until ready to assemble, then beat in 50ml whipping cream to combine.
Step 2
To start assembling the dessert, use the yule log slices to line the sides of a large trifle bowl. Quarter the remaining slices and fill the middle of the bowl, then drizzle the Cointreau over the sponge.
Step 3
With the peel still on, cut 2 of the clementines into 5mm thick slices. Carefully remove the peel, leaving the clementine discs intact. Place a disc above and between each slice of yule log, pressing onto the sides of the bowl to stick. Spoon in the custard and spread evenly. Zest one of the remaining clementines and reserve for garnish. Using a sharp serrated knife, segment the remaining clementines. Scatter the segments over the custard.
Step 4
For the topping, whisk the double cream, remaining whipping cream and vanilla paste together until softly holding its shape, then spoon on top of the trifle. Scatter over the chocolate orange almonds, grated chocolate and reserved orange zest, then serve.
