Cherry yoghurt ice

Cook’s tip: If you have an ice cream maker, put the yoghurt mixture in and follow the manufacturer’s instructions, adding the cherries towards the end of the process. This recipe is perfect for cherry season when the fruits are plentiful. You can also make it with raspberries, strawberries or blueberries.

Ingredients

  • 900g (2lb) Vanilla yoghurt
  • 6 tbsp Milk
  • 25g (0.9oz) Caster sugar
  • 225g (8oz) Cherries halved and stoned

Method

  • Step 1

    Pour one tub of yoghurt (450g / 1lb) into a large plastic container. Whisk in the milk and sugar and then whisk in the other pot of yoghurt. Put on the lid and freeze for 3 hours until almost solid.

  • Step 2

    Break up the frozen yoghurt and then whisk well until almost smooth. Stir in the prepared cherries and then return to the freezer for 3 hours until firm. Take the ice cream out of the freezer 10 minutes before serving.
