You'll want to make this addictive fruit salad on repeat – it's the freshest dessert you'll taste this summer.

Ingredients

  • 500ml/17.5 fl oz Cherry or pomegranate juice
  • half Vanilla pod split
  • 500g/1lb 2oz Pack of watermelon wedges rind removed and sliced into smaller triangles
  • 400g/14 oz Cherries destoned
  • 10g/0.5 oz Fresh mint leaves

Method

  • Step 1

    Put the juice and vanilla in a saucepan over a medium heat. Bring to the boil, then simmer until reduced by about two-thirds, syrupy and thick (be careful as it can easily catch and caramelise at this stage – it should remain purple-red and not brown). Set aside to cool completely (or cool and chill for up to 3 days). 

  • Step 2

    To assemble the salad, arrange the watermelon and cherries on a serving platter. Remove the vanilla pod from the syrup, then drizzle it over the fruits and scatter the mint on top.
