Ingredients

  • 230g/8oz cream cheese
  • 1 tbsp chives snipped
  • 1 tbsp creamed horseradish
  • 1 lemon, squeezed
  • 6 fresh bagels
  • 150g (5½oz) smoked salmon
  • 200g (7oz) pastrami or salt beef, sliced
  • 100g (3½oz) salami or chorizo
  • 100g (3½oz) cheddar, sliced
  • Pack of butter
  • 1 jar caperberries
  • 1 jar Dijon mustard
  • 1 avocado, halved and stoned
  • 1 cooked beetroot, sliced
  • 1 beef tomato, sliced
  • ½ cucumber, sliced
  • 2 cos or romaine lettuces, leaves separated
  • 2-3 fresh figs, halved
  • sprigs of dill or flat leaf parsley, to garnish

Method

  • Step 1

For whipped cheese, put the cream cheese in a bowl and beat until fluffy. Transfer half to a small container and pack into a cool bag. Add the snipped chives and horseradish with a squeeze of lemon juice to the remaining whipped cheese and beat to combine. Transfer to a separate small container and pack into the cool bag.

  • Step 2

It is easiest to halve the bagels at home so they are ready to be filled. Pack the smoked salmon, cold meat slices, cheddar slices and butter in the cool bag, as well as the jars of caperberries and mustard.

  • Step 3

You could slice the avocado in advance, but to keep it looking fresh, it is best to transport the halved avocado in the cool bag, ready to be scooped out and sliced to serve. Pack the avocado along with the sliced beetroot, tomato and cucumber, the lettuce leaves, halved figs and fresh herbs.

  • Step 4

Pack a sharing board and cutlery, including spoons for the condiments. You can also pack small bowls for the butter, mustard and caperberries, if you like. Arrange the board when everyone is ready to eat – and enjoy!
