Blackberry and lavender gazoz mocktail

This refreshing fizz is perfect for the last days of summer – here’s how to make your own syrup and capture the freshest flavours

Top tip: Add a measure (or two!) of gin before the soda to turn this delightful soft drink into a decadent cocktail

Ingredients

  • 500g (1.1lbs) blackberries
  • 500g (1.1lbs) caster sugar
  • 25-50g (0.9-1.7 oz) dried lavender
  • soda to serve
  • extra blackberries to serve
  • extra dried lavender to serve
  • edible flowers (optional)
  • fresh fruits (optional)

Method

  • Step 1

    Bring 750ml water and the sugar to a boil. 

  • Step 2

    Add 25-50g of dried lavender (depending on how strong you would like it to be) and the blackberries and simmer for 15-20 minutes. 

  • Step 3

    Leave to cool, then double strain and you have your gazoz syrup. Keep in a sealed container in the fridge for up to six weeks. 

  • Step 4

    To serve, add 50ml of the syrup to a hi-ball glass, top with soda and garnish with dried lavender and blackberries. For a more flamboyant finish, pile it high with edible flowers and other fresh fruits, too!
