Apple tart

Ingredients
- 50g ground almonds
- 50g coconut flour
- 2 tbsp ground flaxseed
- 4½ tbsp butter, plus extra to grease
- 2 large eggs
- 5 tbsp water
- salt
- ¼ tsp vanilla extract
- 4 Pink Lady apples, peeled
- ½ lemon, juiced
- ½ tsp cinnamon
- cream, to serve (optional)
Method
Step 1
Preheat the oven to 180°C/160°C fan/gas mark 4. Grease a 20cm loose-bottom tart tin with butter.
Step 2
For the crust, mix the ground almonds, coconut flour, flaxseed, 2 tbsp butter (melted and cooled), eggs, water, pinch of salt and vanilla until well combined. Press the mixture into the tin and bake for 10-12 minutes.
Step 3
To make the purée, dice 2 apples into cubes. Add 1½ tbsp butter, the lemon juice, cinnamon and cubes into a non-stick saucepan over a medium heat. Cover and cook for 5-8 minutes. Drain off excess liquid and cool before blending.
Step 4
For the topping, thinly slice the remaining 2 apples and set aside. Spread the purée onto the base then layer the apple slices on top. Evenly dollop the remaining tbsp of butter on top of the apple slices. Bake for 25-30 minutes or until the apples are soft and golden. Serve with cream, if liked.
