Air fryer sweet potato fudgy brownies

Ingredients
- 200g sweet potato, peeled and cubed
- 65g vegan butter
- 100g vegan chocolate, broken into small pieces
- 75ml water
- 75g self-raising flour
- 30g cornflour
- 150g caster sugar
Method
Step 1
Place the sweet potato in a 450g loaf tin and bake in the air fryer at 160°C for 15 minutes.
Step 2
Meanwhile, melt the butter in a bowl over a pan of simmering water – ensure the bowl does not touch the water. Once almost melted, add in half of the chocolate and the water. Stir until fully melted, then remove from heat.
Step 3
Add the baked sweet potato and blend until super smooth, using a blender or food processor.
Step 4
In a separate bowl, combine the self-raising flour, cornflour, and caster sugar. Make a well in the centre and pour in the chocolate sweet potato mixture. Stir until well combined. Gently fold in the remaining chocolate.
Step 5
Line the loaf tin with baking paper and pour in the brownie batter. Bake in the air fryer at 170°C for 25 minutes. Leave to cool and set for 1-2 hours before slicing.
