4 fuss-free snacks

Serves: 1 (per snack)

Ingredients
- 50g red pepper, sliced
- 20g soft goat’s cheese
- basil or thyme leaves (optional)
- 100g Galia melon
- 100g low-fat natural cottage cheese
- herbs of your choice (optional)
- 100g spinach leaves
- 100g watermelon
- 5g mixed seeds
- 5ml balsamic vinegar
- 80g 0% fat Greek yoghurt
- ½ lime, juice
- 80g blueberries
- mint leaves (optional)
Method
Step 1
To make the red pepper and goat’s cheese: chop the pepper into strips and spoon the goat’s cheese onto them. Sprinkle with basil or thyme, if liked.
Step 2
To make the cottage cheese and Galia melon: cut the melon into wedges. Spoon over the cottage cheese and sprinkle with herbs (try mint or basil), if liked.
Step 3
To make the watermelon with spinach: put the spinach on a plate, cut the watermelon into small triangles and lay on top. Sprinkle with seeds and drizzle with balsamic vinegar.
Step 4
To make the blueberries with yoghurt and lime: spoon the yoghurt into a pot, squeeze in the lime. Add the blueberries. Garnish with mint, if liked.
