These refreshing fruit kebabs are a perfect palate cleanser after a barbecue
Top tip: If you’re hosting, you can prepare the kebabs and walnut salsa in advance and refrigerate, then simply BBQ when you’re ready.

To make the walnut salsa, place the caster sugar in a small saucepan with the lime juice and 4 tbsp water. Heat gently until the sugar has dissolved. Bring to the boil and cook for 2 minutes or until the sauce is pale golden in colour. Add the lime zest then stir in the walnuts and set aside to cool.
Thread the prepared fruit onto 4 wooden satay sticks or skewers. Brush them with a little flavourless oil and place them on a hot BBQ for 2-3 minutes each side.
Remove from the BBQ and place each kebab on a serving plate. Spoon over the walnut salsa and serve with a scoop of lemon sorbet or a spoonful of vegan Greek-style yoghurt, if you like.
